 2 cups Midnight Beauty® seedless black grapes
1/2 cup blueberries
Arils from half a pomegranate
1 lime, juiced
1 tbsp honey
1/2 tsp ground cinnamon
1 tsp dired oregano
Black pepper
400g fresh ricotta
Plain flour for dusting
2 tsp olive oil

Wanting to get your dose of antioxidant friendly resveratrol?

This healthy breakfast has heaps of red grapes full of the organic compound, and it is relatively easy to make, too.

Instructions

Cut the Midnight Beauty® seedless black grapes into quarters.

Place in a bowl, together with the blueberries and pomegranate arils. Add lime juice, honey, cinnamon and oregano. Seaon with black pepper.

Gently toss together so the fruit is covered with honey and lime dressing.

Cut the ricotta into four pieces. Place on a plate and dust very lightly with flour, on both sides.

Heat a non-stick frying pan or grill plate on a medium-high flame.

Pour in olive oil and tilt the pan, so the oil spreads around. Once hot, but not smoking, add the ricotta.

Leave to cook for 2 minutes on one side, until a golden brown crust has formed. Turn gently and cook the second side for 2 minutes.

To serve, place a piece of cooked ricotta in the middle of four plates. Scatter over the grape salad and serve immediately.
