'Godfathers' of Aussie Italian offer tasting


Lombardians Alessandro Pavoni and Stefano Manfredi host their third collaborative dinner at Ormeggio at The Spit on Wednesday, July 6, 2011.
The culinary masters of Northern Italian cuisine -  Lombardians Alessandro Pavoni and Stefano Manfredi, considered one of the ‘Godfathers’ of Italian food in Australia, host their third collaborative dinner at Ormeggio at The Spit on Wednesday, July 6, 2011.
 
In the height of winter, Pavoni – from Brescia, and Manfredi – from Gottolengo, a small town in Italy’s northern region of Lombardy -  bring their home region’s warmth and richness to Sydney’s premier waterside eatery. Perched on the edge of the D’Albora Marina - between Mosman and  Sydney’s Northern Beaches, Pavoni’s Ormeggio reflects the atmosphere of the lakes of Lombardy in winter. 
 
The smooth waters of Middle Harbour transport diners in seconds to northern Italy from the comfort of Ormeggio’s warm wood lined interiors for this special occasion.  The seasonally inspired four course menu for $135pp, including matching wines, reflects the individual styles of both Pavoni and Manfredi.
 
Pavoni says ,“It is always such a pleasure to work alongside Stefano, this will be our third dinner and we are excited about it! We were both born in the same city but it is amazing to see the difference in our two cuisines, even though we only grew up a few miles away from each other. It just makes sense to combine our passion and love for our homeland and be able to share the intricacies of Italian cooking with the Australian public.”
 
The menu flows from assaggini (appetizers), primi (entree), spiedo alla bresciana (Brecian spit-roast), secondi (mains) and dolci (dessert). 
 
Guests will arrive to be welcomed by a glass of  Il Mosnel - Cuvee Brut Franciacorta from Lombardia pared with four light appetizers - Assaggini (amuse bouche) two designed each by Pavoni and Manfredi.
 
Starting off the journey for the evening with the ‘Pane della casa’ Osvaldo Vannini olio extra vergine - Lago di Como – a selection of breads with the best in Italian olive oil from the Lake Como region.  The oil is the most northern extra virgin olive oil produced in Italy, and is very light and low in acidity.
 
A selection of two “primi” have been designed by Manfredi, the first choice being the ‘Murray Cod, salsa picante di lardo e capperi’. The Murray river fresh water fish is ideal for this dish, being very similar to the lavarello fish in Lake Garda Italy. The steamed Murray Cod is served with a condiment made from hot chilli, lardo and capers matched with the Filippi – Soave DOC 2009 from the Northern region of Veneto - with the elegant aromas of mineral salts, white flowers, white peach and herbs. The multi-dimensional palate is both lean and creamy with minerals and yeasty notes. 
 
The second selection for the primi is the 'Maccheroncini with yabbies and toasted sesame’ (maccheroncini meaning small macheroni).  The ragout yabbies are slowly cooked in beer stock garlic and parsley and finished with extra virgin oil and toasted sesame seeds.  The dish is matched with the Camillo Donati – Malvasia Rosa Frizzante 2009 from Reggio Emilia - this is a sparkling, more characterful, dry, earthy rendition.
 
Next stop, the secondi, is the famous Brescian dish - and a favourite of Pavoni’s - the ‘Spiedo Bresciano’ - spit roasted meats of quail, duck leg, pork scotch fillet and pork ribs. The meats are cook in a special Brescian made rotisserie for 5 hours, basted with butter and served with soft polenta salads.  The dish is matched with Mamete Prevostini – Sassella Valtellina Superiore DOCG 2007 from Lombardia - a light Nebbiolo with lovely cherry fruit characters laced with tea/spice and a savoury finish.
 
The finale is Pavoni’s dolce pick, the ‘Monte Bianco e cachi’ of chestnuts, cocoa nibs sauce, chestnut milk curd and persimmon that is matched with the Vittorio Bera – Moscato d’Asti 2009 from Piemonte.  Delightfully fruity and fresh without being overly sweet, the moscato is f ollowed by a Caffe e dolcetti – coffee, in true Italian style.
